    grilled bacon walleye

    I did a search to see if this was posted already, and
    did find the bacon bbq salmon, but this is a bit different.
    So my apologies if this is a repeat, but if not, you have to try it!!

    Simply take the thicker back pieces of the walleye, and cut into chunks (about the size of a good scallop). Take
    some bacon (I've settled on about a third of a piece) and
    wrap that around the walleye and toothpick it.

    Sprinkle with your favorite spice...I used Old Bay...and
    grill on low heat until the bacon is cooked. I didn't use
    a grid, just put right on the grill, but turned regularly.

    We've started calling it "walleye candy"!

    I have been doing the same for a few years only difference is I take the walleye chunk and roll it across plate covered with brown sugar before I wrap it with bacon. I also have been calling them walleye candy.

    walleye chunks wrapped in bacon,, covered with sweat baby rays = pure candy!!!

    on the bbq its great, but with the flames from bacon grease, i have been sticking them in the smoker on higher heat (350 almost an hour) and they come out perfect everytime.

    Sounds like a great recipe, but I am a purest when it come to walleye meat.
