    Favorite Knife

    What's your favorite knife for cleaning salmon and trout??

    I've been using a 10" cimeter (breaking) knife and love it.

    How bout you guys??

    I'm on the same page as you B-Man, Love my cimeter. (actually have 4) 1 in the boat, 2 in the truck and 1 in the kitchen.

    For kings and other big fish I love my Dexter Russel 12" cimeter. I also use a wusthof 8"fillet knife for finer cuts and for removing the skin. it works very well on smaller fish like steeheads as well.

    If it's not electric it's Cutco. Adjustable blade locks into position from 6" to 9".

    That Cutco is by far the best knife I have ever used. I have literally amazed guys at the launch with this knife. I'll never go back to an electric. stabbed myself with it last year filleting out a wild turkey breast..went clean through my hand. Very Very sharp, holds an awesome edge.
